Q. Because I am a shift worker it’s difficult for me to prepare some meals. What should I do?

A. The beauty of the SlimBuddy programme is its flexibility. If you’re pushed for time for lunch here are a few ideas. First, remember that in the Orientation phase you should avoid all bread. But that will not stop you eating cottage cheese or any low fat version of any other cheese e.g. Feta, Mozarella, Ricotta. You can also eat hummus, dried apricots, cherries. It’s not difficult to pack a slice of lean meat or white chicken to have with a little cheese and tomato, for example. In the Continuation phase you can make sandwiches using wholegrain bread, Pumpernickl. Pitta bread makes a very good base for low GI sandwiches.For example, you could fill a pitta pocket with feta cheese, a few olives (in brine), cherry tomatoes and salad, and drizzle over a teaspoon of extra virgin olive oil and a splash of lemon juice. Hummus of course goes great with pitta. For dessert treat yourself to a small portion of fruit topped with a little yoghurt or cottage cheese. Delicious!.
